This one requires a lot of chopping, but it is so tasty and ridiculously healthy!  My mouth is watering just thinking about how good it is!  We take the cheese out and buy packaged roasted, unsalted almonds to save on chopping time.

Whole Chicken in a Slow Cooker Recipe


Prep Time: 20 min
Cook Time: 8 hours

Ingredients:

Rub Ingredients

  • 2 tsp salt
  • 2 tsp paprika
  • 1/2 tsp garlic powder
  • 2 tsp thyme

For the Crockpot

  • 1/2 cup chopped white onion
  • 1/2 small bag of already peeled baby carrots - no need to cut them up
  • 5 red potatoes cubed
  • 20 whole Brussels sprouts - they have washed and ready to go bags of them at Trader Joe's.  I use the whole bag.
  • 2 garlic cloves, peeled and smashed
  • 1 whole lemon quartered
  • 1/4 cup chicken broth
  • 4 to 5 lb whole chicken - I usually buy the organic ones at Trader Joe's

Directions:

  1. Mix the rub ingredients and set to the side.
  2. Place all onion, carrots, potatoes, Brussels sprouts and garlic in crock pot.  Pour in the broth.
  3. Remove chicken from packaging and rinse.  Then place in crock pot on top of veggies.
  4. Put the rub all over the outside of the chicken and place the lemon inside. 
  5. Put lid on slow cooker and cook chicken on low for 8 hours.  When it's done the meat will be falling off the bone and there will be a tasty broth in the bottom.
